Chicken Curry with Zucchini Noodles serves 4-6 Ingredients: 2 tsp turmeric 1 tsp coriander 1 tsp cumin 1 tsp unrefined salt (I use THIS brand) 2-3 cloves garlic, minced 1 inch piece of fresh ginger, grated (or 1 tsp dried ginger powder) 2 tbsp coconut oil (I use THIS brand) 1 and 1/2 pounds chicken, chopped into small 1-2 inch pieces 1 cup homemade bone broth 1 and 1/4 cup full fat coconut milk (where to get BPA free coconut milk) 3 medium carrots, chopped 1 red pepper, diced 4-5 medium zucchinis, spiralized into noodles juice from 1/2 of a lemon cilantro for garnish Directions: 1. Combine turmeric, coriander, cumin, salt, chopped garlic, and grated ginger in a small bowl. Set aside. 2. Melt coconut oil in a large skillet or pot over medium/high heat. Saute chicken pieces for 5-7 minutes, until no longer pink on the outside. 3. Add spices, stir to combine, and cook for another minute. Then add bone broth and coconut milk. Stir to combine. 4. Add in carrots and red pepper. Bring to a boil then turn down heat and simmer for 5 minutes. The add zucchini noodles and cook for another 5 minutes, until chicken is fully cooked. 5. Hühnchencurry mit Zucchini-Nudeln für 4–6 Personen. Zutaten: 2 TL Kurkuma, 1 TL Koriander, 1 TL Kreuzkümmel, 1 TL unraffiniertes Salz (ich verwende diese Marke), 2–3 Knoblauchzehen, gehackt, 2,5 cm Stück frischer Ingwer, gerieben (oder 1 TL getrocknetes Ingwerpulver), 2 EL Kokosöl (ich verwende diese Marke), 600 g Hähnchenfleisch, in kleine, 2,5–5 cm große Stücke geschnitten, 1 Tasse hausgemachte Knochenbrühe, 380 ml vollfette Kokosmilch (BPA-freie Kokosmilch erhältlich), 3 mittelgroße Karotten, gehackt, 1 rote Paprika, gewürfelt, 4–5 mittelgroße Zucchini, spiralförmig zu Nudeln geformt, Saft einer halben Zitrone, Koriander zum Garnieren. Zubereitung: 1. Kurkuma, Koriander, Kreuzkümmel, Salz, gehackten Knoblauch und geriebenen Ingwer in einer kleinen Schüssel vermengen. Beiseite stellen. 2. Kokosöl in einer großen Pfanne oder einem Topf bei mittlerer/hoher Hitze schmelzen. Hähnchenstücke 5–7 Minuten anbraten, bis sie außen nicht mehr rosa sind. 3. Gewürze hinzufügen, umrühren und eine weitere Minute kochen lassen. Dann Knochenbrühe und Kokosmilch hinzufügen. Umrühren. 4. Karotten und rote Paprika hinzufügen. Zum Kochen bringen, dann Hitze reduzieren und 5 Minuten köcheln lassen. Dann Zucchininudeln hinzufügen und weitere 5 Minuten kochen, bis das Hähnchen gar ist. 5. Zitronensaft darüberpressen.
